4 BURGER BUNS - 2 LBS GROUND ELK - 1 JALEPENO, SLICED - 1/2 TBSP BUTTER - 4 PIECES GREEN LEAF LETTUCE - 4 PICKLED CARROTS - TO TASTE, BLACKENED - SRIRACHA RUB SEASONING - TO TASTE, CILANTRO MAYONNAISE Place ground elk in a mixing bowl and season with Blackened Sriracha. Divide into 4 portions, then form into large patties. Fire up your Pit Boss Griddle and preheat to medium flame. If using a gas or charcoal grill, set it up for medium heat and use a cast iron skillet. Place butter on the left side of the griddle and let melt. Place buns on the left side (on melted butter), and burger patties on the right side. Toast the buns, then turn off the burner, keeping the buns in place to keep warm. Cook the burgers 2 to 3 minutes per side, then remove from the griddle and allow to rest for 5 minutes. Assemble burger: bottom bun, cilantro mayonnaise, lettuce, burger, pickled carrots, sliced jalapeño, cilantro mayonnaise on top bun.
